                Pour a 
                  table spoon of olive oil into a medium sized saucepan and put 
                  onto a medium heat. |

                Throw in 
                  a teaspoon of hing (optional) or you may wish to put in half 
                  a chopped onion instead. |

                Throw in 
                  a couple of tablespoons of sunflower seeds and stir round.  |

                Cook them 
                  for a couple of minutes then add your courgette and peppers 
                  chopped into small pieces. Stir this round for a few minutes 
                  - until the seeds are browning and the courgette and peppers 
                  are softened. |

                Tip in 
                  a tin of tomatoes - the nicer the tomatoes the better the sauce.

                Put in 
                  a teaspoon of oregano. Add salt and pepper to your taste (half 
                  a teaspoon of each maybe) and also add a teaspoon of sugar. 
                  Stir round and turn up the heat a little. |

                When this 
                  starts to bubble turn down the heat to low and simmer it for 
                  around 15 mins. Just enough time to make your pasta. |

                You'll 
                  see that after fifteen minutes the courgette is very soft, the 
                  peppers soft, and everything nicely ready to serve. |
